The 'crespells' (or 'crespellets'), of the latin word 'crispus' (curly), are a typical Majorcan cakes similar to cookies that are a delight for children and adults.
Ingredients:
1 Kg of flour
400 g of sugar
1 pinch of salt
2 eggs
1 milk or water
1 yeast
Preparation:
1. Sprinkle the flour over a marble surface or in a tub, make a hole and add the rest of ingredients beginning with the yeast.
2. Knead it without working on the pastry.
3. Leave it settle for fifteen minutes.
4. Make the crespells sprinkling flour over the surface, extending the pastry with your hands, making a ball and stretching it with a rolling spin doing a sheet of 1 cm of width, approximately and then use an special tin (or breaking into pieces).
5. Make them some holes with a fork.
6. Place them over an oiled oven tray and bake them from 20 minutes to half hour at 180 degrees.
7. Once cooled, sprinkle a pinch of icing sugar.
